Skinny Spaghetti Squash and Meatballs | Skinny | Skinny Mom | How ...

If you crave Italian but hate the carbohydrates that come with eating pasta, then you will love trying this recipe for Skinny Spaghetti Squash and Meatballs.? Tender spaghetti squash serves as the perfect substitute for pasta combined with lean meatballs and your favorite marinara sauce.? This dish is not only delicious but it is also on the lighter side and will quickly become an Italian family favorite.

Makes 4 Servings

Ingredients:

  • 1 large spaghetti squash (about 4 pounds), halved lengthwise and seeded
  • 1 jar reduced-sugar spaghetti or marinara sauce
  • 1 pound lean ground sirloin (95% lean)
  • 1 teaspoon garlic powder
  • 2 minced garlic cloves
  • 1/4 cup plain breadcrumbs (look for whole wheat if you can find)
  • 1/4 cup Fiber One Original Cereal (crushed or food processed to a bread crumb consistency)
  • salt and pepper to taste
  • 1/4 cup reduced-fat Parmesan cheese
  • 3-4 basil leaves, torn

Directions:

  1. Place spaghetti squash facing down in a shallow baking dish filled with 1/4 cup water (water should barely fill the bottom of the dish.) Place spaghetti squash in microwave until a fork can be inserted through the middle and the squash is soft.
  2. Preheat oven to 375 degrees. Spray a cookie sheet with non-stick cooking spray or line with foil.
  3. Combine meat, breadcrumbs, Fiber One bread crumbs, garlic powder, garlic cloves, salt, and pepper; mix well. Form meat into meatballs about 1 1/2 inch thick and place on cookie sheet. Cook in oven for 20-25 minutes until brown and meat is cooked to desired consistency.
  4. After squash has cooked, remove from cooking dish. Using a fork, scrape the strands of squash into a dish and season with salt and pepper.
  5. Add heated spaghetti squash and meatballs to spaghetti squash. Top with basil leaves and Parmesan cheese.
